Hearty Veggie Bean Chili
Chunky chili with black beans, chickpeas, tomatoes, corn, and bell pepper simmered with chili powder and cumin. Cozy, filling, and great for leftovers.

Instructions

Heat olive oil in a large pot over medium heat. Sauté diced onion and bell pepper 5 minutes until softened.

Add garlic, cumin, chili powder, and black pepper. Cook 1 minute until fragrant.

Stir in black beans, chickpeas, corn, and diced tomatoes with their juices. Add a pinch of salt.

Bring to a simmer, then cook 20-25 minutes on low, stirring occasionally, until thickened.
