Tofu Veggie Post-Workout Stir-Fry
Crispy tofu with broccoli and bell pepper over brown rice to restore glycogen and protein after training.

Instructions

Cook brown rice according to package directions, about 25 minutes.

In a skillet over medium-high heat, warm half the olive oil and cook tofu 5-6 minutes until golden. Remove and set aside.

Add remaining oil, broccoli, and bell pepper; cook 5-6 minutes until tender-crisp.

Stir in garlic, ginger, and black pepper for 30 seconds.

Return tofu, add lemon juice, toss 1 minute, and serve over rice.
