Lentil & Sweet Potato Stew
Hearty green lentils simmered with sweet potato, tomatoes, and spinach in a lightly spiced broth. Comforting, high-fiber, and perfect for meal prep.

Instructions

Heat olive oil in a pot over medium heat. Add diced onion and cook 4-5 minutes until translucent.

Stir in garlic and cumin, cook 1 minute until fragrant.

Add lentils, cubed sweet potato, diced tomatoes, and 1 liter water. Bring to a boil.

Reduce to a simmer and cook 25-28 minutes until lentils and sweet potato are tender.
