Instructions

    Cook brown rice according to package directions (about 25 minutes). Keep warm.

    In a bowl, toss sliced chicken with cumin, minced garlic, salt, and pepper.

    Heat half the olive oil in a large skillet over medium-high heat. Cook chicken 6-7 minutes until browned and cooked through. Remove and set aside.

    Add remaining oil to the skillet. Sauté sliced onion and bell pepper 5-6 minutes until tender-crisp.
