Tofu Broccoli Ginger Stir-Fry
Crisp tofu cubes tossed with broccoli and bell pepper in a ginger-garlic soy glaze. Serve over rice for a speedy weeknight vegan dinner.

- minced
- dry, for serving
Instructions

Cook brown rice according to package directions if serving with rice.

Heat sesame oil in a wok or large skillet over high heat. Add tofu cubes and cook 5-6 minutes until golden. Remove and set aside.

Add broccoli and bell pepper to the pan. Stir-fry 4-5 minutes until tender-crisp.

Stir in garlic and ginger, cook 30 seconds.

Return tofu to the pan. Pour in soy sauce and toss 1-2 minutes to glaze everything.

Serve immediately over cooked brown rice if desired.
