
Sweet Potato & Egg Hash
Golden sweet potato cubes sautéed with peppers, onion, and spinach, topped with runny eggs. A hearty skillet breakfast that is naturally gluten- and dairy-free.

Instructions

Heat olive oil in a large skillet over medium heat.

Add cubed sweet potato and cook 8-10 minutes, stirring every couple of minutes until beginning to soften.

Stir in onion and bell pepper. Cook 5-6 minutes until vegetables are tender and edges are golden.

Add minced garlic and spinach. Cook 1-2 minutes until spinach wilts.

Create two small wells in the hash and crack an egg into each.
