    Heat half the olive oil in a pan over medium heat. Add diced bell pepper and cook 2-3 minutes until slightly softened.

    Stir in spinach and cook 1 minute until wilted.

    Add black beans and cook 1 minute to warm through. Transfer mixture to a bowl.

    In the same pan, add remaining oil. Scramble eggs over medium heat for 2-3 minutes until just set.
