Black Bean Breakfast Quesadilla
Whole wheat tortilla filled with scrambled eggs, black beans, peppers, and a touch of cheddar. A hearty handheld breakfast that fuels the morning.

Heat half the olive oil in a pan over medium heat. Add diced bell pepper and cook 2-3 minutes until slightly softened.

Stir in spinach and cook 1 minute until wilted.

Add black beans and cook 1 minute to warm through. Transfer mixture to a bowl.

In the same pan, add remaining oil. Scramble eggs over medium heat for 2-3 minutes until just set.

Lay tortilla flat. Spread bean mixture on half, add eggs, and sprinkle cheddar if using.

Fold tortilla over the filling. Cook in the pan 2-3 minutes per side until golden and cheese melts. Cut and serve warm.
